<p><span style="LINE-HEIGHT: 115%">Thibault Liger-Belair (pictured) - the rather more, ahem, substantial Liger-Belair, as opposed to <a href="http://www.jancisrobinson.com/articles/jr7053.html">Vosne Romanée's Prince of Belair</a> - is lucky enough to own almost a third of the 7.5 ha premier cru Les St-Georges, the jewel of Nuit-St-Georges (which was named after it, after all). Indeed, local gossip is that it will be officially elevated to a grand cru soon. Jump in before the wines are priced at grand cru level!</span></p>
<p><span style="LINE-HEIGHT: 115%">Like all Thibault Liger-Belair's vineyards, this has been Ecocert-certifed organic for some time and is always one of his big successes.</span></p>
<p><span style="LINE-HEIGHT: 115%">He does not make light wines. But nor are they ridiculously overweighted by oak. They are agreeably plump. I have tasted </span><span class="Apple-style-span"><strong>Dom Thibault Liger-Belair, Les St-Georges Premier Cru 2006 Nuits-St-Georges</strong></span><span class="Apple-style-span"> at least five times now, most recently in a blind line-up of premier cru and&nbsp;</span>grand cru red burgundies, and scored it 17.5, writing, 'Rusty ruby colour. Like a heady fruit cocktail on the nose. Sweet start and very charming. Just ready to drink and drenched in easy-to-appreciate red fruit flavours.' I think it will have many delicious years ahead of it but it would be absolutely stunning with any special meal, especially one featuring roast turkey, over the coming weeks.</p>
<p><span style="LINE-HEIGHT: 115%">It is worth noting, however, that this wine has consistently shown well, whether during the en primeur tastings in early 2008 or in the much less forgiving context of the <a href="http://www.jancisrobinson.com/articles/a200909092.html">blind tastings of 2006 burgundies</a> that I undertook in Beaune a couple of years ago. <br /><br />Thanks to Thibault's unusually extensive holding, you can find this wine with several merchants in the UK and the US as well as widely in Europe and Asia. En effet, en lutte biologique et en Biodynamie nous n'avons pour nous protéger des maladies de type Mildiou et Oïdium que des produits dits de «&nbsp;contact&nbsp;». Cela signifie qu'ils se déposent simplement sur la feuille ou sur les grappes mais qu'ils ne pénètrent pas à l'intérieur de la plante, et, qu'à la moindre averse, ils sont totalement lessivés. Nous avons donc dû renouveler nos traitements toutes les semaines, et avons eu l'impression de ne faire que cela. Mais le jeu en valait la chandelle, car une fois la véraison commencée, début août, le raisin n'était plus sensible à ces attaques. Mais le beau temps ne s'était toujours pas installé et donc de la pourriture commençait à apparaître sur des raisins pas mûrs ce qui n'augurait rien de bon pour la suite. Nous avons ainsi décidé de créer une aération maximum dans les raisins en séparant toutes les grappes une par une pour éviter les foyers d'humidité favorables à la pourriture. La grappe de Pinot noir est petite et compacte et si l'ambiance humide persiste, elle pourrit de l'intérieur. <o:p></o:p></span></p>

Mais voilà qu'Eole se réveille pour décider de souffler du nord à partir du 14 septembre apportant avec lui les rayons de soleil. Quel bonheur de revoir cette couleur bleue sans une tâche blanche dans le ciel et surtout sans une goutte de pluie. Ce temps de fin de saison a permis de bien assainir le milieu&nbsp;: le raisin se concentre par évaporation. Il faut bien faire la différence entre la maturation (ou mûrissement) par évaporation et celle par circulation de sève&nbsp;:<o:p></o:p></span></p>

Dans ces cas là, il faut bien savoir quand est atteint le bon équilibre sucre-acide pour récolter au bon moment, avant d'avoir une surmaturité qui pourrait donner des vins mous et manquants de fraîcheur et d'acidité.<o:p></o:p></span></span></p>

Cette volonté, associée à des rendements faibles, a conduit à un volume de récolte inférieur à <st1:PersonName w:st="on" ProductID="la moyenne. De">la moyenne. De</st1:PersonName> l'ordre de 22HL/ha pour les Saint Georges à 32 hl/ha pour les Bourgogne et Hautes Côtes de Nuits.<o:p></o:p></span></span></p>

Mon objectif dans un millésime plutôt acide est toujours d'essayer de compenser cette acidité par plus de rondeur. Nous pouvons favoriser l'obtention de cette rondeur par des débuts de fermentation lente à basse température. En effet, dans le processus de fermentation, nous trouvons plusieurs réactions de transformations du sucre en alcool, nous avons la fermentation alcoolique et la fermentation Glycéro pyruvique qui va créer le glycérol. C'est la seconde voie de transformation des sucres en alcool, cette transformation va grandement participer à l'onctuosité des vins.<o:p></o:p></span></p>

Si je prends l'exemple d'un vin qui est mesuré à 235grammes/litre de sucre, soit un potentiel en alcool d'environ 13.00%, nous nous retrouvons en fin de fermentation avec un vin ne titrant que 12 %.<o:p></o:p></span></p>

Bien sûr, il ne faut pas être contre le progrès, mais, de temps en temps, il est bon de se poser la question de comment suivre et comprendre les processus naturels, plutôt que de toujours vouloir les façonner à la main de l'homme.<o:p></o:p></span></p>

Il n'est pas rare de ne récupérer que 1 à 2 litres de lie à la fin de l'élevage alors que nous en avions rajoutée 5 à 7 litres au moment de la mise en fût, cela prouve que l'on a bien un phénomène d'absorption des lies par les vins.<o:p></o:p></span></p>

Je pense que la production de grands vins passe par une réflexion à toutes les étapes du processus de production. Beaucoup de personnes sont sceptiques sur nos méthodes de culture car elles sont difficiles à évaluer et à en mesurer les effets. De temps en temps, il faut mettre de côté notre esprit cartésien au profit des sensations et du ressenti, il faut avoir l'impression de sentir se que l'on fait et de penser que l'on fait du bien à la plante.<o:p></o:p></span></p>

Je pense que la passion et la volonté que nous mettons dans le travail de la vigne et du vin se transforment en émotion dans un vin. <p style="TEXT-JUSTIFY: inter-ideograph; TEXT-ALIGN: justify; MARGIN: 0cm 0cm 0pt" class="MsoNormal"><span style="FONT-FAMILY: Garamond; COLOR: white; FONT-SIZE: 11pt">C'est un millésime construit sur l'acidité un peu comme 2006, soutenu par une très belle richesse d'arômes et de tanins. Ce que j'aime dans ce genre de millésime, c'est qu'on retrouve l'identité de chaque terroir. Je me défends souvent d'avoir un style propre à mes vins, mon objectif étant toujours que chaque vin ait sa propre identité. Je préfère que l'on reconnaisse, dans chacun des vins produit le sol et le sous-sol dont il est issu plutôt que la signature du vigneron. Nous ne sommes que locataires des vignes. Notre métier est bien de respecter et mettre en avant notre terroir plutôt que de vouloir poser une empreinte de notre passage sur cette terre. Ce sont ce genre de millésimes qui nous ramènent à la réalité et qui inspirent l'humilité car il ne faut pas oublier que fin août nous ne pensions quasiment pas vendanger, et, au final, nous avons un superbe millésime taillé pour la garde.<o:p></o:p></span></p>
